Weekly Lunch Ideas

I love to make a big batch of soup or salad to have for lunch throughout the week. Something healthy that I can divide into reusable containers to take to work. One of the primary reasons I started this blog was to keep track of some of the lunches I have made, and also to inspire myself to keep making lunches with new ingredients rather than fall back on my old standards all the time.

You may notice some themes: first, I am a big fan of chickpeas and other legumes and use them quite frequently. I also love to roast vegetables - roasting brings out the sweetness in all types of vegetables and adds a nice contrast to the grains and legumes. I am a former vegetarian, and my lunches are still usually vegetarian. It's fun to experiment with new beans and grains!
